Choice of the seasoning, profile of the vegetables used and the preparation method creates variety in salads. Our paneer Cashew Stir Fry salad is very healthy and prepared from the best ingredients.
Our paneer salad recipe is made from homemade paneer and homegrown veggies and herbs. It is ideal to used freshly prepared paneer because of its freshness and soft texture. However, you can also use store-bought paneer; just make sure to have completely defrosted it before use. Homemade paneer can be made through a simple preparation of curdling milk by adding 1 tbsp of vinegar or freshly squeezed lime juice to hot boiled milk. Pour the curdled mix through a muslin cloth over a colander to strain the excess water. Squeeze it well to remove the excess water and press down in order to later cut it into cubes.

Even though the recipe calls for sautéed paneer, one can also add raw paneer cubes. However, stir-frying the paneer cubes for 2-3 minutes to remove the raw taste of milk and remove any excess water makes it crunchier. Stir-fry the chopped mint and cashews too, however, you can avoid sautéing the tomatoes.

200 gms of homemade paneer
4 tsp of organic mint leaves chopped
1 medium chopped tomato
1 onion cut into cubes
50 gm Only Organic Cashew Nuts
3 tsp of Only Organic Virgin Coconut Oil
Salt to taste
Cut the paneer into small square cubes.
Heat a frying pan on low flame. Add 2 tsp of Only Organic Virgin Coconut Oil. Stir-fry chopped mint leaves, cashews, and paneer cubes together for three minutes. Once it changes color, add one tsp Only Organic Pepper Powder and sauté again for 2-3 minutes.
Remove from heat and transfer the paneer mix to a bowl. In the bowl, add the medium chopped tomato, sliced onion and sprinkle salt (reserve a few cashews, as we need them for garnishing). Mix them together with a spoon.
