Dried Fruits Atta Cake

During New Year season we have decided to make a egg less atta cake with dried fruits. To maintain the sponginess of cake we used whole wheat flour with condensed milk, although the texture of egg cake cannot be obtained.

For healthy recipe we choose for whole wheat flour with organic dried fruits.

Preparation Time : 10 min

Cook Time : 40 min

Ingredients :

Wheat flour – 165 gm

Organic  Coconut Sugar – 2 tsp

Organic Virgin Coconut Oil – 1 tsp

Organic Dried Jackfruits – 1 tsp

Organic Dried Mango  – 1 tsp

Organic Cashew Nuts –  5 nos

Organic Cardamom – a pinch

Condensed Milk  – ½ cup

Cinnamon Powder – ¼ tsp

Baking Soda – ¼ tsp

Baking Powder – 1 tsp

Preparation :

1.Take a large glass bowl and mix organic sugar, ¾ Coconut Oil and ½ cup of condensed milk, mix well.

2.Add whole wheat flour, baking soda, baking powder, cinnamon powder, cardamom and pinch of salt and mix well with no lumps.

3. Make thick batter with adding some amount of water.

4.Add 1 tsp of Only Organic Jack Dried fruits, 1 tsp of Only Organic mango dried fruits, 1 tsp of Only Organic cashew nuts and mix well as dried fruits are distributed evenly.

5.Bake the cake at 180 degree Celsius for 40 minutes.

6.Allow cake to cool and cut into slices and serve.

Platter it with some dry nuts and raisins.
