Nutmeg or Myristica fragrans is the seed of the evergreen tree from the genus Myristica that releases an irresistibly warm and sweet aroma that is perfect for cakes, pies, and spirited drinks. The tree derives two spices – the seed nutmeg and its covering mace.

Nutmeg trees may reach a height of about 20 metres and their prime age is 25 years. They yield fruit eight years after sowing and bear fruit for 60 years or longer. The fruit is a pendulous drupe, similar in appearance to an apricot. When fully mature, it splits in two, exposing a crimson-coloured mace, surrounding a single shiny brown seed nutmeg. After collection, the nutmegs are conveyed to curing areas where the mace is removed, flattened out, and dried. During this time the nutmeg shrinks away from its hard seed coat until the kernels rattle in their shells when shaken. The shell is then broken with a wooden truncheon and Plantrich Organic Nutmeg’s are picked out. The nuts and mace are dried separately on a drying yard, or on a platform arranged in a kitchen. The scarlet coloured mace gradually becomes yellowish-brown and brittle when drying is completed.
